A legendary property with a storied history, the Ritz Paris has defined Parisian opulence for decades - its distinguished front entrance on the Place Vendome has welcomed the likes of Marcel Proust, Coco Chanel, and the Duke and Duchess of Windsor. And while it’s easy to imagine the grandeur of its heyday, the Ritz remains pertinent today. Its palatial interiors convey an inimitable sense of luxury that feels classically Parisian, without pretense, and its doting service is renowned for its personalization and perception.

The hotel is home to the iconic Bar Hemingway, with its leather chesterfield banquettes and portraits of Ernest himself, but the golden-hued Ritz Bar is even more theatrical, with an ornate lantern carved with scenes from the zodiac that ascends to the ceiling every evening at 5:30PM sharp. Presiding over the whole show is Bar Director Romain de Courcy, whose fashion background brought him to New York, Singapore, and London, where he fell in love with the bar world. We chatted with Romain about his career path, what makes the Ritz Bar so special, and his favorites in the City of Light.

Romain de Courcy: The Ritz Paris' Bar Director Redefines Cocktail Culture

For over five years, Romain de Courcy has been at the helm of one of Paris’ most iconic bars: the Ritz Bar. A seasoned veteran in luxury and hospitality, his unique journey from fashion to mixology has shaped his approach to cocktails, elevating them to an art form at the legendary Ritz Paris.

De Courcy, who began his career with fashion houses like Hermès and Berluti, has always had a love for the finer things in life. But it wasn’t until he discovered the cocktail world that he found his true passion. "I fell in love with the cocktail scene," he says, reflecting on his transition from sommelier to bar director. "After working in avant-garde street bars, gastronomic restaurants, and private clubs, I wanted to challenge myself to take over the bar of one of the greatest hotels in the world."

What draws de Courcy to the Ritz is the weight of its legacy. "What always strikes me is the sparkle in people’s eyes when you tell them you work at the Ritz Paris," he shares. "It makes us proud, but also reminds us of the great responsibility we carry." As he looks after the bar’s illustrious reputation, de Courcy is inspired by the Ritz’s history as a trendsetter in hospitality. “César Ritz didn’t just define luxury; he revolutionized it. The Ritz Paris was the first hotel to have electricity, elevators, and en-suite bathrooms," he notes. "I want to rekindle that pioneering spirit and create cocktails that are just as innovative."

De Courcy’s dedication to innovation shines through in his signature creation: The White Gold. Crafted to celebrate the Ritz Paris’s 125th anniversary, this cocktail is an ode to summer’s elegance in the hotel’s lush gardens. Combining delicate white flowers like jasmine and magnolia with cassis bud, bergamot, coriander leaf, and vanilla, The White Gold is topped with champagne for a luxurious spritz. "It’s built like a perfume," de Courcy explains, "refined and designed to enchant."

Grande Mosquée de Paris

While he’s proud of his cocktail creations, de Courcy doesn’t just live in the world of luxury cocktails. When he's off duty, he savors a more local side of Paris. His perfect day in the City of Light begins with a slow, leisurely breakfast at Caducée or Dose, two of his favorite cafés in the 17eme arrondissement. “After that, an art exhibition or an independent film at La Pagode — it’s a beautiful spot," he says. His day then winds down with a creative meal at one of his favorite restaurants, like Pages in the 16eme arrondissment or A.T. in the 5eme, paired with a carefully chosen bottle of wine.

De Courcy’s love for Paris extends beyond the Champs-Élysées. He recommends exploring the quiet charm of the Batignolles neighborhood, in the northwest corner of the city. "It’s unpretentious, with independent bakeries, small cafés, and wine bars. You get a real local vibe," he says. For those seeking hidden gems, de Courcy points to the Parc des Buttes Chaumont in Belleville, the Marché de Grenelle in the 15eme, and the Grande Mosquée de Paris, which offers a retreat that feels worlds away, with its mint tea and North African pastries.

When it comes to culture, de Courcy’s favorite spots for art and museums include Beaubourg, La Fondation Louis Vuitton, and Le Musée de la Vie Romantique. For a quiet escape, he recommends the serene Jardin des Batignolles or the picturesque Parc Monceau for a leisurely stroll. If indulging in Parisian pastries is your thing, de Courcy and his sweet tooth can’t resist Ritz Paris Le Comptoir by Ritz Paris Pastry Chef François Perret, or the decadent pistachio panettone at French Bastards.

Of course, Paris is synonymous with wine, and de Courcy enjoys sampling the best in the city. Whether it’s a glass of champagne at Pétillance or a natural wine at Yard, the Ritz Bar director knows where to go for a drink with style. As for unique shopping experiences, he recommends Le Bon Marché, where you can discover high-end finds, and Nose for an exceptional selection of niche perfumes.

But if there’s one thing that de Courcy enjoys most, it’s Paris in the winter. "I love a cold, crisp, sunny winter day spent wandering through the city," he muses, suggesting a hot drink at a local café as the perfect way to enjoy the season.

Summer’s not all bad though - in the warmer months, de Courcy recommends the summer music festivals, such as We Love Green and Rock en Seine, as well as Art Basel, which is fast becoming one of the city’s must-see art events following its 2022 debut, and this year will run from October 24 - 26, 2025.
